Racing demon: two summer cocktails by the Savoy's head bartender at Glorious Goodwood

The Great Goodwood Punch cocktail

Unlike Lord March, who I saw striding around the Richmond Enclosure in a navy trench coat as rain beat down before racing began yesterday morning, I didn't think to take a jacket to Glorious Goodwood. With numb hands, soaking feet and my dress flying over my head, I cowered in the new Trilogy Bar, where The Savoys award winning head bartender Erik Lorincz sweetly mixed me one of the Burlington Bertie cocktails he’ll be serving guests in Lord March’s box this week.

It was a wonderful pink colour and the vodka warmed me up no end, but after only a few drops of absinthe I couldn’t tell you whether there were eight or 18 horses in the first race.

Lorincz, who runs the American Bar at The Savoy in London, has also created a Goodwood Punch. Do try these at home...

An old-fashioned term know also as Tic-tac (also tick-tack and non-hyphenated variants) is a traditional method of signs used by bookmakers to communicate the odds of certain horses. A tic-tac man will usually wear bright white gloves to allow their hand movements to be easily seen.

45ml Vodka

15ml Evangelista ratafia liqueur

15ml sugar syrup

30ml lemon juice

3 drops of absinthe

dash of egg white

Shake all ingredients and pour into coupette or martini glass.

Garnish with dried lavender.

45ml London Dry gin

20ml rhubarb juice

30ml cloudy apple juice

15ml elderflower liqueur

30ml lemon juice

15ml sugar syrup

Pour all ingredients into punch bowl with ice, stir well and serve over ice in medium goblet or white wine glass.

Garnish with 1 slice of cucumber disc and 1/2 fresh strawberry.
