Cookbook of the week: Roast by Marcus Verberne

Kippers with lemon butter is just one of the recipes in 'Roast' 

Roast, the lofty restaurant in London’s Borough Market serving up traditional British food, was launched in 2005. A lot has happened since, not least to Borough Market, which has become not only a foodie hot spot but also a seething post-work destination for office escapees.

And Roast itself, once something of an outpost, is now surrounded by decent places to eat. So this book, produced by its head chef, Marcus Verberne, is a timely reminder of how unique the concept was originally. As you’d expect, Roast is meat friendly – there are chapters on poultry, lamb, goat, pork and beef, with a nod to seafood and veg. There’s a useful section on basics, but it’s the breakfasts that really get the juices flowing. Verberne suggests opening the window before grilling your morning kippers.

Grilled kippers with lemon butter recipe

Serves 2

2 kippers opened out

50g softened butter

The juice of half a lemon

1 tbsp chopped chives

Brown toast, to serve

Preheat your grill to a medium heat. Smear half the butter over the opened side of the kippers. Melt the remaining butter in a large oven-proof frying pan and lay the kippers in the pan skin-side down. Place the pan under the grill and warm the kippers through for about four minutes. Remove the pan from under the grill and place back on the hob. Squeeze in the lemon juice and sprinkle over the chives. Baste the kippers in the lemon butter and serve on the toast.
