Speedy weeknight suppers: chicken burger with herby tahini slaw

Ditch fatty beef burgers for a delicious chicken-breast-in-a-bun with a nutty, tahini-laced coleslaw

As burgers go this is a pretty healthy one. Made with yoghurt and tahini, the slaw’s dressing has a delicious nutty flavour without the richness of traditional coleslaw. Combined with salad leaves, lean chicken and raw cabbage, it is nutritious as well as satisfying.

Serves 2

2 ciabatta rolls (or other bread roll)

2 chicken breasts

Zest and juice of ½ a lemon

1 tsp chilli powder

1 tsp oregano

Olive oil

1 tbsp tahini

1 clove garlic, crushed

4 tbsp natural yoghurt

¼ red cabbage

¼ white cabbage

1 red onion

Handful each of roughly chopped parsley and coriander

Salad leaves to serve

Start off by laying the chicken breasts flat on a board and slicing each one horizontally with a sharp knife to leave you with four slim escalopes.

Place them in a bowl with a good glug of olive oil, the lemon zest, oregano, chilli powder and some salt and pepper. Lightly rub the dried herbs and spices into the chicken and set to one side.

Remove the outer leaves and stalk of the red and white cabbage and very finely slice. Peel and finely slice the red onion and put into a bowl with the cabbage and chopped parsley and coriander.

Make the dressing by combining the tahini, yoghurt and lemon juice in a bowl with 1 tbsp olive oil and the crushed garlic. Season with salt and pepper and whisk together. Pour this over the cabbage and onion and toss well to evenly distribute the dressing.

Heat a frying pan over a moderate heat (hot enough to sizzle when you add the chicken) and add the chicken breast pieces. Cook for about three minutes on each side, checking that they’re cooked all the way through. Set aside to rest.

Slice the ciabatta rolls in half and drizzle a little olive oil over the cut side. While the chicken is resting place cut side down in the same frying pan and cook for a couple of minutes until golden.

Assemble the burgers - a layer of rocket or other green leaves, then the chicken breast, followed by a generous amount of slaw and lastly the top half of the ciabatta.
