Cookbook of the week: The Pepperpot Club, by Jonathan Phang

Fashion expert Jonathan Phang has created this cookbook of Caribbean-inspired recipes.

You’re more likely to know Jonathan Phang as a fashion expert, a judge on the TV programme Britain and Ireland’s Next Top Model. So if your dream is to become next year’s top model, it’s helpful to discover that Phang is also very keen on Caribbean food – hence this book of recipes, mostly gathered from his childhood, illustrated with dreamy pics of Caribbean life in the 1950s and 60s. Phang’s family contains an all-embracing mix of Chinese, east Indian, African and Amerindian and his book exhibits the same kind of inclusive style: recipes for curry, mittai, salt fish and char siu pork sit alongside jerk ribs, blackened Creole fish and pumpkin fritters. Fried okra with tomatoes is veg dished up southern-style.

Fried okra with tomatoes

Serves 4-6

1 tbsp vegetable oil

1 onion, thinly sliced into rings

450g okra, trimmed

3 cloves of garlic, crushed

The juice of 4 a lemon

1 red pepper, halved, seeded and diced

2 green chillies, halved, seeded and finely sliced

400g tin chopped tomatoes

4 tsp dried thyme

Heat the oil in a frying pan over a medium heat. Add the onion and sauté for five minutes until soft and translucent. Add all the remaining ingredients, combine well, cover and simmer for 15 minutes. Season and serve immediately.
