Made in Herefordshire is full of delicious recipes, including this chocolate cake 

A couple of books out at present celebrate the food of a particular British region, ideal if you’re planning a local, seasonal 2014. The New West Country Cook Book (Diligence, £20) is a compendium of home-cooking compiled by the food photographer David Griffen, with contributions from Nathan Outlaw and Mark Hix, among others. The recipes in Made in Herefordshire, mainly from individuals and producers, may better suit small domestic kitchens. Dishes include venison stroganoff, from Brinsop Court Estate, and this chocolate cake, courtesy of a Wye Valley hop-grower’s daughter.

Dorothy Goodbody’s luxurious chocolate cake recipe

Serves 8

125g unsalted butter

275g dark soft brown sugar

2 eggs, beaten

170g plain flour

1 tsp bicarbonate of soda

½ tsp baking powder

200ml Dorothy Goodbody’s stout, or other stout

75g cocoa powder

Preheat the oven to 180C/gas mark 4. Line a 19cm baking tin with greased baking paper.

Cream the butter and sugar together in a large bowl. Add the eggs gradually and beat until pale and fluffy.

Sift the flour, bicarb and baking powder into a separate bowl. In another bowl, mix the stout into the cocoa.

Alternately add the beer mix and the flour mix into the egg mix in small quantities and combine well. Pour into the tin and bake for one hour.

Leave to cool. Serve with chocolate sauce, if desired.
